Some of you may have read that title and thought, "It's a little early for pumpkin bars"...but I assure you, make this recipe and you will soon change your thinking that pumpkin bars are acceptable year round! I have a weak spot for sweets and I fall victim to these pumpkin bars time and time again.
Pumpkin Bar Ingredients:
-4 eggs
-1 & 2/3 cups of sugar
-1 cup of oil
-16 oz can of pumpkin
-1 tsp salt
-1 tsp baking soda
-2 cups flour
-2 tsp baking powder
-2 tsp cinnamon
Mix all ingredients together well in a blender and poor all the mixture in a well greased 9x13 inch pan. Bake in the oven for 350 degrees for 25-30 minutes (test the pumpkin bars as you would a cake, poking the bars with a fork and making sure nothing sticks to the fork before removing bars from the oven). After pumpkin bars are finished, remove from oven and allow to cool.
While the pumpkin bars are cooling, begin to prepare the cream cheese frosting.
Cream Cheese Frosting:
-3 cups powdered sugar (add or decrease to desired consistency)
-6 oz of cream cheese
-3 tbsp of butter
Cream all ingredients together in a mixer, adding powdered sugar slowly managing consistency of frosting.
After the pumpkin bars have cooled smooth frosting over the pumpkin bars.
Cut up your pumpkin bars, serve and enjoy!
You will now never consider pumpkin bars just a fall treat, I promise !
