I am so lucky to have a fiance who loves to cook. He enjoys searching the internet or a cookbook for a recipe he has never made and spending a weekend afternoon perfecting it for dinner.
We have recently tried a few recipes discovered on Pinterest that I thought I would share with all of you. I had been pinning recipes for awhile, but we hadn't ever tried any out so here are some that we really enjoyed.
Pene Rosa with Shrimp from Back To Her Roots-
This recipe is supposed to taste like Pene Rosa from the restaurant Noodles and Company. I love Noodles and Company but there is not one in San Antonio, so when I saw a recipe for my favorite dish from Noodles I knew I had to try it. I am not a sea food lover so we substitute the shrimp for pancetta which was pretty delicious, but next time I want to try it with chicken. This recipe took only about 15 minutes to make and it tasted very similar to the version from Noodles. We will be for sure making this again soon!
Roasted Red Pepper and Goat Cheese Alfredo by Lauren's Latest-
Can you tell we like pasta at this house? This dish was very good. I love goat cheese so I'm always down to try any dish that lists goat cheese as a main ingredient. As expected the sauce was very rich and I don't think next time we would make it for the main dish but possibly a side dish. Also next time I would like to try it with sun dried tomatoes instead of the peppers.
Arugla Salad by Skinny Taste-
We love the Skinny Taste website and have tried many recipes from this site and have always been happy with how they turn out. This site was very light but still had excellent flavor. I loved the unexpected crunch of the garbanzo beans.
Ham and Cheese Sliders by The Girl Who Ate Everything-
We have made these a couple times and even made them with left over ham from Easter. These sliders are super yummy. They have a delicious mustard spread on them and I don't even like mustard but it tastes so good. We leave the poppyseeds off when we make them, but other than that we made this a reoccurring recipe in our dinner line up.

I also had pinned the goat cheese with roasted red-peppers and was planning on making it soon, so I'm glad I got your tips!
I know a lot of people pin and pin and do nothing, but I've made at least 25% of what I've pinned so far. It's my go-to place when I can't decide what to make for dinner!
